Ingredients:
2 LBS chicken thighs - cut into bite size pcs
2 TBSP cooking oil
1 large sliced onion
3 large cloves of garlic - thinly sliced
1 TBSP ginger - thinly sliced
2 dry red chilies - cut into 4 pcs
2 spring onions/scallion - cut into small pcs - white & green part separated

Ingredients For Stir Fry Sauce:
2 TBSP soy sauce
1 TBSP oyster sauce
2 TBSP rice wine
1 TBSP sugar
1/2 TSP white pepper powder
1/4 cup water

Cooking Instructions:
In a bowl mix all ingredients listed under Stir Fry Sauce
Mix well, set aside
Heat oil in a wok/saucepan
Once oil is hot add chicken pcs, Stir fry until they begin to get brown
After 4 to 5 minutes remove chicken pcs, set aside
Add onion slices to the remaining oil in the wok. Stir Fry for 2 minutes
Next add ginger and garlic slices. Saute for 30 seconds
Now toss in dry red chilies & spring onion/scallion - white part
Mix well than add back cooked chicken pcs
Stir fry for 2 minutes then add in stir fry sauce
Mix well, let simmer on low for 5 minutes
Finally, add remaining scallion/spring onion pcs - green part
Mix well then transfer to serving dish/bowl
